Recipes/Chicken Souvlaki

Ingredients:

  • 1 kg chicken, cut into 2-3cm chunks (traditional is breast, I used thighs)
  • ~8-10 cloves garlic (40g) minced
  • 30ml / 2 tbsp dried oregano
  • 5ml / 1 tsp dried rosemary
  • 5ml / 1 tsp salt
  • 60ml / 1/4 cup olive oil
  • juice of 1 lemon
  • 2 bay leaves

Directions:

  1. Mix the marinade ingredients in a bowl, the add the chicken and toss to coat. marinate in the fridge for at least 2 hours, or on the counter for 30 minutes
  2. Cook on a griddle until cooked through - 5-10 minutes total depending on how big the pieces are.
  3. serve with Tzatzki, and greek-ish salad.
